Chocolate Peanut Butter Graham Crackers and a S’more

Share

With less than two weeks remaining of our summer vacation, I am quickly moving into back-to-school gear. There are new lunchboxes, backpacks, clothes and shoes.

I haven’t yet gotten classroom supplies, but I am stocking up on lunch box ideas.

Maybe it’s just me, but when I think of kids and snacks, graham crackers come to mind right away. As a kid, the cinnamon were always my favorite. My kids prefer plain smothered in peanut butter…who can blame them, but smothered crackers do NOT fare well after being thrown into a locker or shoved in a cubby. I make peanut butter grahams but then they want them smothered in nutella…again NOT school friendly.

This year, I found a solution.

Chocolate Peanut Butter Grahams ~ no smothering needed

Chocolate Peanut Butter Graham Crackers

Ingredients

  • 1 1/4 cups whole wheat or graham flour
  • 1/2 tsp salt
  • 1/2 cup of cocoa powder
  • 1 tsp baking powder
  • 1 cup of brown sugar
  • 1/4 cup plain yogurt {i used Greek}
  • 1/4 cup of creamy peanut butter {not all natural}
  • 2 tbsp milk
  • 2 tbsp honey

Instructions

  • combine the flour, salt, cocoa powder, and baking powder {set aside}
  • cream together the brown sugar, the yogurt, and the peanut butter
  • add the flour, milk, and honey
  • mix well
  • roll the dough into a ball and chill for at least 30 minutes
  • roll out the dough into a rough square {about 1/4 inch thick}
  • cut into squares {a pizza cutter works SO well for this}
  • prick each cracker {using a fork or skewer} to prevent the crackers from puffing up
  • bake on a parchment lined sheet @350 for 15 – 18 minutes
  • coll on the sheet for a few minutes and then move to a rack to complete cooling

Of course, it is still summer vacation, so we used ours to make peanut butter cup s’mores.

Enjoy!
