NY style Blueberry Bagels
fresh from the oven
NY style Blueberry Bagels make a delicious breakfast

My family loves bagels. Especially good blueberry bagels.
Plain or toasted
Buttered or with cream cheese
Jelly {lots and lots of jelly} for Stella
and an egg for Charlie. this kid could loves his egg on bagel sandwich.

We go through so many bagels, that I’m not sure why I haven’t tried to make them before.

I suppose they seem a bit intimidating, but really they are pretty easy, and once you try a fresh from the oven bagel, there will be no going back. Seriously, no going back. I am addicted to homemade bagels now.

Ingredients
- 1 package of active dry yeast
- 2 Tbsp sugar
- 1 1/4 cups of warm water
- 3 1/2 cups of AP flour
- 1 1/2 tsp salt
- 1 cup of blueberries {tossed in 1/4 cup of flour}
Instructions
- dissolve the yeast and sugar in 1/2 cup of warm water {let rest 5 minutes}
- mix together the salt and the flour – making a well in the center
- add the yeast and the additional water to the flour
- gently fold in the berries
- knead until you have a soft and elastic dough {either by hand or using the dough hook of a stand mixer}
- don’t worry – the dough will look quite purple
- cover the dough and let rise until doubled {about 1 – 1/2 hours}
- divide the dough into 8 balls
- press into the center of each ball forming a hole, and stretch to form the bagel shape
- let rest 30 minutes
- pre-heat the oven 425 degrees
- bring a large pot of water to a boil
- boil the bagels – 1 or 2 at a time for 3 – 4 minutes {they will float to the top when ready}
- place on baking sheet and bake 20 minutes
By boiling the blueberry bagels before baking, you end up with a crispy crunchy crust and a soft and chewy center. Just like a true bagel shop bagel {only a whole lot cheaper}, only better if you ask me.
Of course if blueberries aren’t your thing, just leave them out. But blueberry bagels are a must in my house, so we added plenty.

Enjoy!

My kind of NYD! Forget healthy, carbs are the best! I remember the first (and only) time I made bagels they were soo good! I am kicking myself right now that I haven’t made anymore, these look gorgeous!
thanks Elizabeth – I can’t believe it took me so long to try. they are delicious
Just took them out of the oven and am schemearing one with butter. OMG, perfection. Thank you so much for the terrific recipe! Your photos are incredibly beautiful, as is your family! Blessings n Be Well!
thanks SO much!!
You use AP flour. Recipes I have used call for Bread flour. Do they taste the same?
I think so yes. But feel free to use bread flour, I just don’t like to have so many different bags going at once, and I always have AP flour at home
Pinned. So stunning! Omg I have only made bagels once and they were cinn raisin but I want to make these!
thanks so much Averie! Cinn raisin are next on my list
Mmmm these sound lovely!! I love the tip about boiling them first for a crispy crust =) Beautiful photos as always, Heather!
thanks Lisa! Hope you r year is off to a great start ?

OMG these look absolutely fantastic!!

These look amazing! I found you through Pinterest and will definitely be checking out more of your yummy recipes. I do have one question about making these bagels- does the 1/2 cup of warm water come from the 1 1/4 cups listed in the ingredients, or do you dissolve the yeast and sugar in a half cup of water and then add an additional 1 1/4 cups?
Thanks for the clarification! I’m planning to make these over the weekend and want to get them right! ?
you had it right – the 1/2 cup is part of the original 1 1/4 cups. I hope you enjoy them.
Oooohhh! I love bagels. I have such a passion for making bread of all sorts. I’ve made bagels before but never flavored kind. These look amazing! Delish.
I am really excited to try other flavors too
I attempted these yesterday! Not formed very well and tasted a little too yeast-y, but it was my first bagel attempt. Will definitely try again!
sorry you were unhappy, but I’m not sure what you mean by not formed very well – once you have a round ball – firmly press your finger into the center- and then spread the hole a bit to make the correct shape. Let them rest for about 30 minutes{while you boil the water} boil and then bake – mine held their shape – but again I’m not sure if that is what you meant
I also had the same problem – my dough was very wet. I used my kitchen aid – maybe I needed more flour? I’m not sure. The balls were very hard to form, and I ended up with very weirdly shaped bagels. I’m going to try again this weekend though!
if the dough is too wet, try adding a bit more flour. Mine was wet, but I was still able to shape them
Hi Heather! Happy New Year! Had to come check out these amazing looking bagels. I’ve never made bagels before, but after looking at these, will definitely need to give it a whirl. Have pinned! ~Erin

Heather, these bagels look absolutely wonderful! I never thought about making my own bagels, but now I think I might. I can’t wait to try them. They look delicious!
they really are so much easier than you think, and so worth the try
Have you tried using whole wheat flour? I was thinking of substituting whole wheat for some or all of the AP flour.
I havve not, but I am trying some wheat bagels later in the week – I’m sure they would be fabulous
I just love these Heather, thanks for linking up at Showcase Your Talent!
thank you. I ate the last one today ?
Made these this afternoon – oh my gosh, they are out of this world! The bagel texture and flavor is spot on. Wow, so good. I subbed half whole wheat and made them with chocolate chips and caramel. I will definitely use this recipe again! They turned out just like you said they would (all your recipes do!) Thanks!

My wife and I made these and they turned out so well, thank you so much for the recipe!
We used frozen blueberries and worried that the cold temperature would deactivate the yeast so we placed it over a warm oven and it worked great.
Secondly the dough was quite wet and sticky and we ended up using half a cup more flour.
Also, the raw bagels floated immediately so we just used various kitchen tools to hold them beneath the boiling water.
We also cooked them for a good 5 minutes extra, and it would seem that the thinner bagels are slightly doughier.
(Also, these tasted sort of like plain bagels, unless you have a particularly blueberry filled bite. We suggest adding more. )
Delicious recipe overall. Our boys are back from Princeton and they devoured them in record time, topped with local cream cheese!
happy to hear that you enjoyed them – the frozen berries are probably the reason for the sticky dough – once they thaw they trow off a lot of liquid – but extra flour certainly helps with that

I just made these yesterday and they are AMAZINGly delicious. I’m making another batch right now.
SO glad you liked them. I need to make some soon
I am wondering if this is possible with Active Instant Yeast, instead of the kind you have to activate. It is all I have right now and want to make these!! ?
Im sure it would be fine
Can you used quick rise yeast. Not a bread or bagel maker. but would like to try these? Have quick rise in the frig?
In reference to my 1st question which step if any would you leave out
you certainly could, it would just reduce the rise time, I don’t use quick rise yeast, but I would assume the first rise is short, and then you;d move into shaping and rising before boiling and baking
Hello! I just found this blog via Pinterest and am in love with some of the posts! I am dying to make these bagels- could you tell me how much yeast is one package? My yeast comes in a big bag so I’m not sure how much to use. Thanks and look forward to browsing more recipes!
sorry – 2 1/4 tsp yeast

Could you make the dough the night before and bake in the morning? If so are there any special instructions? My boys like to eat as soon as they get up And I am sooo not a morning person!
I have never tried to chill the dough the night before, I just bake them at night to eat in the morning.

These were delicious! My family ate them in a day.
Are they supposed to be sweet? Mine were not as sweet as I would have liked, but that may be due to too few blueberries.
thanks for sharing this recipe!
Livi
ours were just slightly sweet, but you could always increase the sugar if your berries are on the tart side

Have you ever tried to freeze these?
I have not, but I;m sure they would freeze really well
I have frozen my extras….they are really great to pop into the toaster in the morning.
I need to make a double batch to keep them in the freezer too, such a great idea
Hallo Heather, I just tried your recipe, it was really good. My husband ate 3 pieces of it in 30 minutes. ?
so happy to hear that – I am addicted to blueberry bagels

I am attempting to make this right now and am a little concerned I used fresh blueberries but wasn’t sure if I was supposed to cook them down or not? So I just washed and tossed them in flour then added them to the dough but my dough looks very wet and is very sticky is this typical I’ve never made bagels before
I did use frozem but fresh should be fine – and yes, the dough will be wet
My dough was too wet as well because of the blueberries so I just added more flour until I got the consistency I needed for it to be elastic.
hope that worked our for you. if i use frozen that is exaclty what i do

1/4 ounce or 7 grams
I’ve been searching for an easy blueberry bagel recipe! Thanks for sharing!
hope you like them, they are a favorite around here
Heather, did you use fresh, frozen, or freeze-dried blueberries? Just curious, because I’ve heard differing opinions on the subject. Thanks!
I’ve made then with both fresh and frozen
When you used frozen did you add flour to count for the extra moisture?
I usually toss them in flour first, yes

thank you so much jamie
It’s a cold rainy morning here in New Zealand and I’m excited to curl up with these warm bagels and a mug of hot chocolate….mmmmmm!
hope you enjoy them as much as we did
Love these bagels! Made them about 5 times now ? I make them on Saturday and eat them throughout the week! My only question is the part about them rising when boiling. As soon as I put them in the water they float! So I just set a timer. Was curious if they sank at first for you, and others. Thanks!!!
no, they don’t really sink for more than a second or two, more like bob around – and I am SO glad you are enjoying the recipe

Hi, I was wondering if you used unbleached AP flour or bleached AP flour? I also read that you’ve tried fresh and frozen blueberries, I was wondering which one you would recommend and which ones did you use in your pictures? thank you! ?
I almost always use frozen, and I always use King Arthur unbleached flour
Thank you! I hope mine turn out just as amazing as yours!
I hope so too!
I forgot to ask, is the dough suppose to be wet after kneading? I used frozen blueberries and after kneading it for a couple of minutes, it became very wet. Do I add more flour or just let it rest and rise covered?
with frozen berries, the dough will be quite wet, but if it is too hard to knead, add a bit more flour to the surface

Is my doughsupposed to be super sticky after it rises? Seems almost impossible to make a shape.
yes, very especially if you use frozen blueberries
Yum yum YUM!!!! I made two batches as a first time bagel maker – one plain (for my plain jane husband) and one adaptation of cranberry orange with craisins and orange juice (just 1/4 cup replacing 1/4 cup of the water). SO GOOD. Can’t wait to try blueberries next time when I actually have some in the house.
i’m so glad you like them. the blueberry are my fave, unless it’s pumpkin season and then those are me fave ?
This is a great recipe, and I have made it several times now, and again just today. I’m just waiting at this moment for them to raise prior to boiling. Once you’ve eaten these you just can’t go back to the commercial ones. I live too far out in the boonies to have a good shop to produce them, but your help has been much appreciated. Well done and thanks.
thank you so much!
You make this recipe seem so easy! I think I’ll have to try it ?
bagels really are not hard at all, and SO much better homemade
I made these yesterday and they did turn out delicious! I did run into a problem; as the berries broke up in the dough, the juice made the dough so wet I was adding so much flour to combat this problem. I didn’t knead it as well as I think I could have, any tips on the wet dough issue when using blueberries?
frozen blueberries will produce a very wet dough, and a more purple bagel – but adding flour when rolling and forming worked for me – fresh berries are easier to add and won’t make the dough as wet – just make sure to find smaller berries
These look so amazing! I love blueberry bagels, and I didn’t realize making them at home wasn’t that bad. I’ll definitely have to try this recipe soon! I think my family would quite enjoy these as well.
thank you! we love them. and once you make them a few times it is so simple to do
I’ve never even thought about making my own bagels. It always seems so intimidating! But, you’re inspiring me to give it a try. These look AMAZING!
thank you. they rally are much easier than they sound. and after a few batches you can make them super fast
wow this looks amazing! I’m not a baker myself but I could def try to do this one day. Can I sub the blueberries for strawberries
i have not had much luck with strawberry; i have been trying, but they make the dough SO wet
I’ve never tried to make bagels at home, but this recipe definitely makes me want to try! They look so delicious!
thank you, i love homemade, and they aren’t nearly as hard to do as you may think
My oldest son would absolutley LOVE these. I never even thought to try to make my own. I bet these are amazing. Might have to try this soon.
they are SO much better than store bought and really pretty simple to make
These look amazing and I’m not even a huge fan of bagels!

How much yeast is in one package? I have a container of it, not packages.
there i about 2 1/4 tsp in an envelope of yeast
How much yeast is in one package? It’s my first time working with it, and I bought a container of Yeast so I’m not sure how much to put because I have no packages. This recipe looks AMAZING by the way.
thank you, and you will need 2 1/4 tsp
It looks so magnificent!! Amazing recipe!! Is it suitable for low carb?
thank you so much. i wish bagels were low carb ?

My bagels never sink in the boiling water? So I just boil them 4 mins?
yes, they don’t always sink
Got bored with my usual home made cinnamon bagel, so I tried this. It came out bland, taste more like slightly salty bread. Blueberry didn’t come through at all….maybe I should have used soft/mushy blueberries. 2 Tbps of sugar is not enough, it seems.
you could certainly use more sugar – i dont care for sweet bagels – and my blueberries were soft – and the flavor came through very well
These bagels are AMAZING! I have made this recipe about 5 times now and everyone always raves about them. Literally a thousand times better than crappy store bagels and equal to delicious cafe bagels.
Plus, they’re so easy! I honestly can’t even believe how easy they are. Thank you soo much for the recipe!
thank you so much! this is easily one of my most favorite recipes
Tried these out a few weeks ago and I am obsessed!! They are so delicious!
