these christmas tree pancakes are the perfect holiday breakfast, and are as festive as they are easy to prepare
Stella said to me the other day that Christmas isn’t as much fun now that she’s older. She loves the baking and the decorating, but really misses the magic it had when she was young and believed in Santa.
I miss those days too. Charlie and Stella would write their letters, we’d bake cookies, and spend all of Christmas eve tracking Santa. After church they’d rush home to see how close Santa was to California. They’d hang their stockings, put the cookies and milk out for Santa, and spread magic reindeer food all over the front walkway. Then they’d try their hardest to fall asleep. When they finally fell asleep, Ian and I would get to work putting toys together and setting everything under the tree. Ian even used to throw bells onto the roof. The excitement of the morning was almost too much for them. They were always up before the sun. The early mornings I don’t miss a bit. But the rest was pure joy.
Just because the kids stopped believing in Santa doesn’t mean this mom has to leave all the Christmas fun behind. Every once in a while I like to surprise the kids with a fun breakfast. Today it was these wintry christmas tree pancakes. They are so festive, but couldn’t be any simpler. Use your favorite pancake recipe and a bit of kelly green food coloring. I like to use the gel food coloring for a more vibrant pancake. To keep them green I cook them over low heat, 300 on my electric griddle.
To create the tree shape I used 1/3 cup of batter for the bottom pancake, then 1/4 cup, 2 Tbsp, 1 Tbsp, and the top of the tree is 1 teaspoon of batter. A raspberry and some powdered sugar add the finishing touches. I know that using food coloring is NOT popular, but sometimes a little fun is in order, and these christmas tree pancakes are the most fun holiday breakfast.
