Mexican Skillet Casserole is the perfect answer to the what’s for dinner question
Sometimes it’s Mexican Monday,
or taco Tuesday,
and it may have to wait and become Taco Thursday.
Either way it is the kids favorite night of the week.
But tacos or burritos can get boring week, after week, after week.
And I happen to be madly in love with my cast iron skillet.
So I mixed the two together and got a super tasty, super fast and easy weeknight meal the entire family loved. Surprise, surprise, surprise…NO whining!!
Ingredients
- 1 tsp olive oil
- 1 small onion {chopped}
- 1 lb of lean ground turkey
- 2 Tbsp taco seasoning {I love Trader Joe’s }
- 2 cups of cooked brown rice
- 1 cup of black beans {from a can}
- 1/2 cup of shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1 avocado diced
- cilantro {for garnish}
Instructions
- heat the skillet over medium
- add the oil and onion
- saute until soft {just a few minutes}
- add the ground turkey, and cook until browned – stir to crumble [4 – 5 minutes}
- add the taco seasoning
- stir in the rice and beans, cooking until everything is warmed through
- top with the cheese, and cook until melted
- remove from the heat, and top with the diced tomatoes, avocado, and cilantro
It’s great served as is , but my kiddos loved scooping it up with chips of course.
Enjoy!
Tasty, fast and easy, my kind of dinner, love this and my boys would love it too!
thanks Matt – it’s my kind too

Had this for dinner tonight. Made my own taco seasoning and we ALL loved it – including a 10 month old and 4 yr old. ? ? ? Thank you!
awesome!! I’d love to hear how you made the seasoning
No set recipe – I just add a bit of ground cumin, ground chilli, ground paprika, oregano and black pepper to the frying pan instead of the taco mix and then taste and repeat whatever it needs!
delicious
I made this tonight with my own taco seasoning as well as we are trying to reduce our salt intake. I used chili powder, cumin, smoked paprika, Mexican oregano, garlic powder. I used brown rice and liked the nutty flavor it added to the dish. I wondered if I should throw in some Ro-tel tomatoes to give it a little juice, but I figured I could do that with the leftovers to switch it up a little bit. Very easy to make and a crowdpleaser. Thank you so much for the recipe!
thank you so much! Im glad you enjoyed it
This is perfect for a busy weeknight. And I love anything I can throw into the cast iron skillet ?
you and me both! my skillet get a work out for sure
