Buffalo Chicken Poutine
I try to vary our weekly meal plan as much as possible, but without fail each week you will find pasta and chicken of some sort.
Chicken is just one of those things that I always have at home. It’s easy to prepare, versatile, and usually something I can get the kids to eat without too much bargaining.
But, as someone who has chickens in the yard (for eggs NOT for eating) I am really fussy about the chicken I feed my kids. You see, while our chickens do serve a purpose, they really are more like pets, just pets that live outside. They are sweet natured, they come when you call them, and they get almost as excited as the dogs do when they see me with treats. Plus, they’re super cute. My sister was really hoping this would make us join her in being vegetarian.
What it did do was make me more aware of not only what I feed my family, but where our food comes form.

Foster Farms Simply Raised chickens are American Humane Certifiedand raised without the use of antibiotics. I know my girls are MUCH happier when they are out of their coop, so cage-free for me is a must. Not to mention they are American Humane Certified!
And I know my kids are much happier when they get fries with their dinner. Of course they’d be over the moon if the fries were their dinner…
So I topped our french fries with shredded Foster Farms Simply Raised fresh chicken breasts, crumbled blue cheese, and an insanely delicious buffalo style poutine gravy.
If you have not yet tried poutine, you need to make that happen
fries, cheese, and gravy oh my

Ingredients
- 1 lb Foster Farms Simply Raised Boneless Skinless chicken breasts, seasoned with salt and pepper, baked or poached and shredded
- 1 bag of frozen french fries, prepared according to the package
- 1 cup of crumbled blue cheese
- for the gravy –
- 6 Tbsp butter
- 1/4 cup flour
- 1 1/2 cups of chicken stock
- 1/4 cup hot sauce
- salt and pepper to taste
Instructions
- while the fries are baking, prepare the gravy by melting the butter in a medium saucepan
- once melted, whisk in the flour – continue whisking until the flour has completely absorbed the butter
- whisk in the stock and hot sauce, simmer until the gravy thickens – about 5 minutes, season to taste with salt and pepper
- top the french fries with the shredded chicken, blue cheese crumbles, and the poutine gravy
I’m not sure I’ll ever be able to eat my french fries any other way
Enjoy!
