Strawberry and Cream Cheese Coffee Cake
Can I just tell you how happy it makes me to have breakfast done the night before. I actually think I sleep better. I know it sounds weird, but it’s completely true.
Mornings may very well be my least favorite time of the day, that and homework time. I wish I was a morning person. Yes I get up when my alarm goes off…that does NOT mean I like it! Trust me I DO NOT.
All the coffee in the world could not make me enjoy getting out of bed, but simply knowing that this beauty of a coffee cake is waiting for me, and that all I have to do is slice and serve the kids, well that definitely makes it easier.
Ingredients
- Cake and Crumb:
- 2 cups of AP flour
- 3/4 cup of sugar
- 1/2 cup butter in 1 tbsp size pieces
- 1 tsp baking powder
- 1/4 tsp salt
- 3/4 cup of Greek Yogurt
- 1 egg
- 1 tsp vanilla
- Berries:
- 1 cup of berries {hulled and quartered}
- 2 tbsp sugar
- 1 tsp cornstarch
- Cream Cheese Icing:
- 2 oz softened cream cheese
- 4 tbsp cream
- 1 tbsp honey
Instructions
- Toss the berries with the sugar and cornstarch and set aside
- Combine the flour and sugar
- Cut in the butter until you have coarse crumbs
- Set aside 3/4 cup for the topping
- To the remaining flour mixture add the salt and baking powder
- Mix in the yogurt, egg, and vanilla
- Spread the batter into a prepared 8 inch cake pan {lined with parchment or buttered}
- I used a springform pan
- spoon the berries over the batter, and top with reserved crumb
- Bake @350 for 50 – 55 minutes
- Cool before removing from the pan
- While the cake cools make the icing –
- cream together the cheese, cream, and honey
- {you may want to add a bit more cream to get the right consistency}
- Drizzle on the completely cooled cake
5 days til summer break
Enjoy!
