Skinny Wednesday ~ Coconut Latte
I really wish I could tell you that I LOVED to exercise. I LOVE the feeling after I exercise, but the actual exercise NOT so much.
Every night I have good intentions to wake up early and get my run in before the kids are awake. Then, the alarm goes off, and I am too tired to get out of bed.
On the rare occasion that I do get up early, my workout doesn’t go well because I end up hungry without energy. But eating requires getting up even earlier, and that is NOT going to happen.
Coffee, now that I can make happen.
The other night I attended the book party for Mindy Cone’s {she’s the talent behind Creative Juice} Macarons. Not only was the party gorgeous, I met so many wonderful bloggers, party planners, and cookie decorators. One very talented cookie decorator had a terrific idea for your morning coffee, and I just had to test it out.
When you blend 1/4 – 1/2 tbsp of coconut oil in to a hot cup of coffee {leave off the small cap of you blender lid}, you get a creamy coconut latte – dairy free, and the fat in the coconut oil keeps you fueled for your morning workout.
{not to mention ALL of the health benefits of this superfood}
Most importantly, it is amazingly delicious!
If you like coconut, you NEED to try this. It has completely replaced my use of cream or milk in my coffee, and it really does keep me energized for my workout {whether I like it or not}
don’t forget to see how my fellow Weight loss Wednesday friends are doing:
Nicole Kayla Becca Lisa Gillian Karyn Sadie Meg
Enjoy!

You sound like me when it comes to exercise. I always have good intentions…but everything else gets in the way. I’ve been trying to get better. Trying….lol.
That coconut latte looks good! I love coffee.
thanks, it really has helped
What makes it so white an creamy? all it is is coffee an cocunut oil? I wanna try it!
it is just coffee and coconut oil – the blending makes it so creamy
I’m completely smitten… your latte looks DELICIOUS….but I’m deathly allergic to coconut! ?
now that is a bummer:( sorry
I’ve just recently heard about this. Hmmm… what about sugar? Does it sweeten it as well? As it gets colder into winter i’m sure i’m gonna want my hot coffee back.
I do not typically use sugar, but you could add some it you wanted – or honey. I LOVE it
Oh my, this sounds amazing. I am boarder line… no, OK definitely obsessed with coconut oil products, so I will need to try this for sure! Thanks for posting.

I’m so wishing I didn’t give up coffee right about now.

Ohhhh, just missed it. It’s Thursday. I can still have skinny coffee, yes? haha
everyday ?
I do like coconut for sure. I was wondering if a hand blender would work as well as a big bender? How did your weight loss go? How can you use coconut oil in cereal, just blend it up and pour it over? I have heard that coconut oil is very good for body. I’m going to try this. And I’m going to pin it on Pintrest…..this looks to be absolutely awesome!
it is slow going for sure – but I am a big believer in coconut oil
