buckwheat pumpkin dutch baby pancake
i can’t believe how long it’s been since i’ve posted a pancake recipe. especially considering how much we love our pancakes over here. this kids are straight up chocolate chip pancake lovers, but they don’t ever turn down a stack of s’more pancakes either. once winter hits they LOVE these hot chocolate pancakes too. for birthdays and holidays funfetti or sugar cookie pancakes are usually on the menu, and when it’s a breakfast for dinner kind of day we ALL love oven fried chicken and pancakes.
but, for the weeks between halloween and thanksgiving it is all pumpkin all the time. i’m still waiting for the pumpkins in the garden to ripen, so we may be eating pumpkin in january too. better late than never i suppose.
as for these buckwheat pumpkin dutch baby pancakes, to be honest they are much more my speed than than kids. probably because there’s no chocolate, and there is buckwheat. but i am obsessed. dutch babies are so much easier than regular pancakes, no flipping or standing over griddle required. and they are so cute when made in mini cast iron skillets. i did make a full size dutch baby too, just as tasty not nearly as cute.
buckwheat pumpkin dutch baby pancake
Ingredients:
- 4 eggs
- 1 cup milk
- 1/2 cup flour
- 1/4 cup buckwheat flour
- 1/4 cup pumpkin puree (not pie filling)
- 1 Tbsp honey
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Directions:
- preheat oven to 400 degrees
- whisk together all of the ingredients until smooth
- pour into a well seasoned 10 inch skillet or 4 mini skillets
- bake until puffed and golden brown (20 – 25 minutes for larger skillet, about 15 minutes for the minis)
- serve immediately (the pancake deflates quickly)
- dust with powdered sugar, or drizzle with honey
- optional toppings –
- yogurt, berries, pomegranates, seeds, granola
i probably cold have gotten the kids more interested in a buckwheat pumpkin dutch baby if it were dripping in chocolate and syrup but i loved them topped with some yogurt and pumpkin seeds or pomegranates and honey.
for dessert i bet some salted caramel would be perfection.
enjoy!
