Key Lime Pudding so rich and creamy
you’d never know it was made with avocado

A few days ago, my food world was rocked.
The lovely and talented Glory, from Glorious Treats, brought over the most AMAZING banana pudding.
I’m not even a huge fan of banana pudding, but I m a huge fan of anything that Glory makes. I shared with my family even though I wanted all the jars for myself.

I would have licked the jars clean if I could have gotten my face in there. It was that good.
Charlie pretty much thinks Glory is a food goddess.
SO, I’ve had this pudding on my mind ever since, and then I read an email from California Avocados. They always include great recipes, and a summer avocado lemon pie caught my attention, and the wheels started turning.
I basically borrowed bits and pieces from both recipes, and made a delicious layered avocado key lime pudding.
It’s extra creamy thanks to the avocado, {and a gorgeous color} the lime makes it refreshing and perfect for summer get togethers, and of course I love anything layered and in a mason jar.
The kids had no idea I even added avocado, not that it would have stopped them. We cannot get enough of them during the summer.
The best part, it is completely no cook. You just blend, chill, and enjoy.
Ingredients
- 1 ripe avocado {peeled and seeded}
- 1/2 cup of key lime juice
- 1 can of sweetened condensed milk
- 2 cup of heavy cream
- 54 graham cracker sticks {broken in half}
Instructions
- combine the avocado, lime juice, and condensed milk in the bowl of a food processor
- pulse until smooth and creamy
- place in a bowl, cover and chill for 2 hours (the pudding will continue to thicken thicken}
- whip the cream until you have stiff peaks
- fold the cream into the chilled pudding until have a uniform color without streaks
- on the bottom of each of 6 jars place 6 graham stick halves, cover with pudding
- repeat for two additional layers {ending with pudding}
- place lids on jars, chill for at least 4 hours
- when ready to eat top with additional whipped cream and graham cracker crumbs
Key lime has been a family favorite for a while; the kids pretty much inhaled the key lime pudding pops and now I don’t think I’ll ever make them without the avocado.
And if for some crazy reason you are not a fan of avocados, trust me you will not taste them at all. Now that I know how creamy and rich they make pudding, I can see MANY no-cook puddings in my future.
Enjoy!
I have got to try this one! I’m not as fortunate to have an avocado-lovin’ kiddo, so I’m looking forward to sneaking them in on this dessert.
Beautiful!
