Steel Cut Oat Porridge with Berries Honey and Chia Seeds

Summer Vacation
It seems like such a FUN idea
Sleeping in
Staying up late
Lazy days spent at the pool
Campfires and s’mores
and it is fun, for about a minute
and then I realize that getting any kind of work done means I need to be up early, before the kids, because the minute they get up the bickering starts
they eat non stop which means my kitchen is in a constant state of disarray
there are “things” left out all over the house, and no one seems to know how they got there
and I cannot get a moments peace, unless I hide in my bathroom
Summer vacation is hard work, and this breakfast is just the fuel you need to conquer the day, no matter what gets thrown your way, and in my house, things really do get thrown – usually in the direction of the older brother’s head.
Ingredients
- 1 cup of unsweetened almond milk
- 1/2 – 1 cup of water {I like a very thick porridge so I only use 1/2 cup}
- 1/2 cup steel cut oats {ground in a food processor or coffee grinder}
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/2 tsp salt
- fresh berries sliced, honey and chia seeds for topping
Instructions
- bring the milk and water to a slow boil
- stir in the processed oats, vanilla, cinnamon, and salt, and continue to stir while it boils gently
- it will thicken up quickly {only a few minutes}
- top with honey, berries, and 1 Tbsp of chia seeds if desired
All kidding aside, we do love summer break, it’s just not much of a break if you’re the mom; I guess our break starts the first day of school.
Enjoy!
I know it! With all the extra time on our hands, somehow the best way to use it is by … doing nothing. ? And eat, of course, eat all the time. Hang in there, you are still making incredible recipes Heather! This porridge is so simple, yet so beautiful and healthy! Haha, I never knew you ground your steel cut oats before using them – no wonder mine never tasted good! ? Trying this tomorrow and pinning!
thanks! I don’t usually grind my oats, but to make a nice smooth porridge, they need to be processed fine, and they also cook super fast
I know right. With my children, I also need to wake up very early in the morning before my kids or else…By the way, thanks for such a lovely recipe. This is definitely perfect for a healthy breakfast.
thanks so much Lindsay
Can`t wait to try this oat porridge recipe. Sounds like the perfect breakfast for me. I`ve never thought to put chia seeds for topping, but I loved the idea. Thanks for sharing!

I definitely think so, it kept me full all morning long, with no mid-morning slump at all
I am so much more exhausted over summer vacation!!! It’s so much harder to work + have kids at home. I need this to fuel me for sure!

Summer breaks are different for us, homeschoolers. We just have more time to play! ? This porridge looks fabulous! Breakfast with berries is my favorite!
I had no idea you were a homeschooling family we were for many years – and I SO miss it, but the kids LOVE going to school
I tend to joke the reason I decided to have one child is so that there is no bickering (total lies, but I will roll with it!) I am seriously in love with your porridge! I need to try this!
my sister has only 1 – and some days I find that SO nice ? thanks kacey
I agree…and I’d go so far as saying any “school vacation”. I always find myself scrambling to get even more done while the kids and hubs are kickin’ back. Hmmph. ? This sounds like the perfect way to start any day, vacation or not.
SO true ? and thanks
Love dressing steel cut oats up with all sorts of toppings! Strawberries and honey sounds especially delicious ?
