Apple Spice Cupcakes with Salted Caramel Frosting
I’m going to keep this very simple.
MAKE
THESE
CUPCAKES
They are really that good.
Seriously good.
I’m never going to fit into my jeans and I don’t really care good.
Keep in mind…I don’t like cake
or frosting
I was eating this frosting with a spoon,
yep
right from the bowl.
Not proud, but I did it, and I’m going back for more.
I’m not saying this because I made the frosting, BUT…
it is the BEST frosting I have ever tasted.
Yes, I did say so myself:)
For the cupcakes:
1 cup of sugar
1 egg
1/4 cup of softened butter
1 cup of flour
1 tsp vanilla
1 tsp apple pie spice
1/2 tsp baking powder
1/2 tsp salt
2 finely chopped apples
combine the flour, salt, baking powder, spice
cream together the butter and sugar
add in the egg and vanilla
mix in the flour
fold in the apples
bake in liners @350 for about 20 minutes
makes 12 cupcakes
cool completely before frosting
Salted Caramel Frosting:
2 sticks of butter
8 ounces of cream cheese
2 cups of powdered sugar
1/2 cup of caramel sauce (homemade salted caramel recipe here)
cream together the butter and cream cheese
add in the caramel and powdered sugar
blend well
once cool frost the cupcakes
Break out those yoga pants.
Enjoy!

Thank goodness I own enough yoga pants to sustain never having gone to yoga! I die over that frosting! Yum.

Between U & Me
Oh! And I’m your newest follower!
Oh my those look so good! Perfect Fall treat ?
they look amazing! I just made an apple spice cake with caramel glaze..great minds think alike ? Your cupcakes look so moist and i LOVE the salted caramel!
Okay, I made the batter and it looks more like you’re making muffins than cake batter. It’s much thicker and I am worried I over stirred it. I added a couple ingredients to boost the moisture levels in the batter in my fear of it being to coarse and chewy like some (overstirred muffins) I have tried. but I am finishing up my first batch of Cupcakes as I type and I will let you know the verdict…
…
Overall the flavor is nice. spicey and earthy bread compliment the rich and decadent icing. When applying the Icing remember LESS IS MORE! I even whipped my icing so that it would be lighter and not as thick. I think I added too much of a moisture boosting, and caused too much gluten to form, which resulted in a light crust on the top of the cupcake. they really did turn out just like muffins. which is interesting. There is so much potential in these cupcakes and overall the flavor is heavenly. I just need to work on tweaking it a little more to get the consistency I like.
Thumbs up! Thanks for the share!
I made salted caramel cupcakes back in may and they really kicked my ass…not so sure about homemade caramel anymore!
Perfect timing, Apple Tasting is going on the next two weekends at Portland Nursery and this looks like the perfect way to welcome Fall!
Oh, wow! These look so good! Headed to facebook to like your page.
fantastic! definitely making these again!
I made these for work Monday; they were just as amazing as described; will be making another batch for Thanksgiving. You are awesome!
I made these… and am using these for a fall baking roundup… I’ve linked back to you!
Emily
thank you Emily!
As I was reading the reviews about how wonderful the frosting was, I was thinking to myself “ok people its just frosting”! Than I made the cupcakes today and as I was licking the beaters clean from every morsel which is something I never do, I realized everyone was right!! Its addictive for sure!!!
Just made these and the frosting tastes amazing it’s just a bit runny and I’m out of powdered sugar:(
that’s no good ? glad you like them

How could I make this stiffer-stiff enough to be able to use decorating tips with it? I tried adding more powdered sugar but it got too sweet.
I’m not really much of a decorator – so other than more sugar I’m not sure – maybe meringue powder
Just made these, still cooling! The batter was so thick I don’t think the apples folded in evenly and I did not get 12, only 10. The caramel sauce came out wonderful and I’m chilling the frosting so hopefully it will be stiff enough for the cupcakes.
Did not see any other comments answering the stiff batter issue.
I have not made these in so long, but I do recall that batter being more thick than other cupcakes, but not too thick to pour and bake. I hope they turned out for you
Everyone loved them!
that is terrific!
