What does breakfast look like in your house?
Every morning I wake with the image of this peaceful beautiful morning in my head. Freshly squeezed juice, a perfectly set dining table, sun streaming in the windows, the smells of coffee and freshly baked muffins in the air.

and
then
REALITY
dogs barking
kids complaining
music blaring

Maybe someday, but at least today we have homemade bagels. I didn’t however get up at 4 am to make them,so the house smells like teenager and dog.

Like I said, someday.

Ingredients
- 1 package of active dry yeast {I use Red Star Platinum}
- 3 1/2 cups of Bread flour {I use King Arthur}
- 1 1/2 tsp salt
- 1/4 cup maple syrup
- 1 1/4 cups of warm water {about 120 degrees}
- 4 slices of cooked bacon {diced}
Instructions
- combine the yeast 2 cups of flour and the salt
- stir in the water and maple syrup
- add the remaining flour and bacon
- knead until you have a soft and elastic dough {either by hand or using the dough hook of a stand mixer}
- cover the dough and let rise until doubled {about 1 – 1/2 hours}
- divide into 8 pieces, and form each into a ball
- using a well floured finger, press a hole into the center {stretching to form the bagel shape}
- let the bagels rest 30 minutes
- pre-heat the oven 425 degrees
- bring a large pot of water to a boil
- boil the bagels – 1 or 2 at a time for 3 – 4 minutes {they will float to the top when ready}
- place on baking sheet and bake 20 minutes

you should also try Blueberry Bagels

You may be the first person in history who is tempting me to try making bagels. They always seemed so intimidating but these are so gorgeous I might have to try!
I was always afraid to try them too, but they really are so much easier than you think, plus they’re delicious
I love these!!! I am so in love with maple and bacon. In a bagel? Perfection!
thanks Dorothy – maple and bacon is the best morning combo ever ?
I always seem to end up on your blog. The recipes…to die for. The pictures…beautiful. These bagels look so good. I would probably die from carb overload if I made these. I guess I will just have to risk it. Thanks for sharing. Saw them on Link Party Palooza.
wow, that’s so nic eof you to say ? thanks
These sound delicious! But I usually like a *slightly* more savory bagel. Is there a way I substitute a portion of the maple syrup?
they really are not very sweet at all,but you could certainly reduce how much you use
I’m pretty sure the hubs would think he died and went to heaven with these! Thanks for linking up at Creativity Unleashed last week. Featuring you on the blog tomorrow and hope to see you back!
wow, thanks so much Jocie
I love your bagel recipes, Heather. I made the blueberry ones… and they rocked! But, of course, this is how I’d like to wake in the mornings for breakfast- with peace and these bagels!
