{no bake} Monster Cookie Granola Bars
I did it!
This was my first year as the mother of a middle schooler,
and I made it through ALL of the projects.
{and there were quite a few}
This week alone there was making a photography disc with iphone pictures, a power point presentation for speech, and the country report display.
{Charlie chose Nigeria…not the easiest to build if you ask me}
The final project was turned in today,
and I am breathing SO much easier.
BUT…we do still have 12 days of school remaining,
which means that I am in need of lunch box ideas for 12 more days.
One of my favorite lunch box treats are granola bars.
Because I was feeling festive today,
{no school projects for at least 4 months does that to me}
our bars got m&ms
but not just any m&ms
peanut butter m&ms,
and since the m&ms are peanut butter,
then the granola bars should get peanut butter as well.
If there’s peanut butter, then you may as well add a bit more chocolate.
{okay so these may not be the healthy sort of granola bars}
but they sure are good!
Happy Friday, Happy almost summer vacation, and Happy Mother’s Day weekend.
Ingredients
- 2 cups of rolled oats
- 1 cup of crisped rice cereal
- 2/3 cup of honey {of agave, or maple syrup…just something STICKY}
- 2/3 cup of peanut butter
- 2 tsp vanilla
- 1/2 cup of m&’s – I used a mix of m&ms; and chocolate chips}
Instructions
- combine the oats, and the rice cereal
- add in the peanut butter, honey and vanilla
- mix until everything is thoroughly coated
- spoon into a square baking dish
- add the m&ms;
- press firmly in to the pan
- let the bars rest for at least 30 minutes before cutting
- {cooling in the fridge also works well}
Enjoy!

Hi, do you have any suggestions for substitutes for the peanut butter (my kids will be going to a school that does not allow nuts). Thanks!
you could try a recipe similar to these chocolate bars – that use melted butter

I love this bars! First, they have my favorite candy, M&M’s, as an ingredient. Second, they are no bake! It’s already hot in Florida so no bake is a definite WIN! Pinned to my food board!

Hi, I made these bars yesterday and they are very gooey and hard to cut. I did place them in the fridge and it did not help any suggestions to get them to stick so I can cut them into bars? Thank you!
sorry…I would only suggest next time adding more oats or PB; I didn’t have much difficulty cutting them. Also, it’s really important that you press them FIRMLY into the pan.

Hi, you have to heat the peanut butter and honey in a saucepan first right? Sounds far too easy if you don’t. Will be trying these next week ?
I didn’t heat the peanut butter. I don’t suggest using all natural, but if you do, heat it with the honey.
Thanks so much, just tried them and it was so easy! Though mine aren’t sticking together very well…I don’t care as they are so tasty!!!!!
I just made these and we are eating them now. They are SO delicious. I felt like I was basically eating a pb&j sandwich all mixed up-with chocolate chips. I used natural peanut butter, didn’t heat it, but they mixed up great. Next time I think I will use less honey. (I will definitely make them again.) I’m working on reducing our family’s sugar intake (mostly of the refined, white sugars) and these tasted too sweet (probably because we have been reducing our sugar). Thank you for sharing! I found you via pinterest!
Glad you enjoyed them Kiasa! We LOVE this treat
These look so good! They’ll make a perfect mid-morning snack for work.
thank you,they are a favorite in my house for sure
This may be a silly question, but did you use instant oats, or old fashioned oats? Thanks! Can’t wait to make these!
I use old fashioned oats

We just made these for the first time (myself and my 5 y/o) and they are so good that after the first batch we immediately made a double batch for the freezer! Not sure who I’m kidding because I doubt any will last long enough to have needed freezing! Mmmmm! I covered the second round w plastic wrap and pressed very firmly to pack ?
thanks so much! I am so happy to hear you enjoyed them, they are one of our favorite treats
