tuna stuffed sweet potatoes

these tuna stuffed sweet potatoes make a fast and easy lunch or light dinner, and when made with wild selections tuna are not only delicious but good for you and the environment as well

The only way we ever ate tuna as kids was in sandwich form. And if you have ever eaten a soggy tuna sandwich that sat in a hot locker for 4 hours, you’ll know why I stayed away from it for many years.

Then one day my mother in law served tuna on a bagel with tomato, salt, and a lot of pepper and I fell in love all over again. Now you will always find a few cans of tuna in my pantry. Tuna is terrific for fast and easy meals. I love it in an avocado especially for lunch. The best part, a 2 ounce serving of wild selections tuna is only 1 point on weight watchers. So as you can imagine I have been eating tuna a lot lately.

Much to the kids dismay, Ian would love tuna noodle casserole at least once a week. But we, mainly me, are trying to cut back on the noodles. I love a good tuna melt, but then that really changes the whole 1 point on weight watchers benefit. So on a whim I tried a family favorite …baked sweet potatoes, and filled them with tuna topped with some greek yogurt, cilantro and a good dose of sriracha.
