10 minute Strawberry Jam

My kids LOVE jam.
As in, they would use it on almost anything if I let them.
Toast, pancakes, waffles, yogurt, tortillas, spoon
Once a jar is opened, it pretty much disappears.
Ian’s family has a farm in Nebraska; it is by far Charlie’s favorite place in the entire world. Every year Aunt Cat sends us jars of her homemade jam. It’s one of the best mail days of the year. Trouble is, those jars don’t last very long, and there have been actual fights about who gets the last few bites. So I was thrilled when I opened up an old cookbook of mine to find a recipe for 10 minute jam.
Even though I have loved every single recipe in the book, I was a wee bit skeptical. Jam, in minutes, made in the microwave. It was pretty thin at first {it did mention this in the book} but as it cools, it thickens quite a bit. The big question, could it pass the kid test?
jar opened, spoon in, and…just like that it was gone. The kids loved it.
Victory.

thanks! the idea belongs to Dorie Greenspan ?
What is the longevity of the jam? I love anything strawberry.
it will last about two weeks in the fridge
OMG that is seriously calling my name. It is so gorgeous. I can’t believe something this wonderful only takes 10 minutes!!
thanks Jocelyn! I was pretty excited it worked ?
That’s incredible! Just 10 minutes and in a microwave? Basically a godsend, especially for our family too! My mom puts jam or preserves on her English muffin every morning, so she goes through jars rather quickly. Although note quite as fast as your sweet kids!
