Growing up, my mom made almost everything from scratch.
I longed for Smuckers jam, but my mom canned her own.
My best friends’ mom always made spaghetti with Ragu, and I thought it was the best thing ever. My mom always made homemade sauce.
The other kids had chips ahoy or oreos in their lunches, but it was homemade for the Kinzie girls. I felt SO deprived.

We did always have a few boxes of Jiffy muffin mix in our dry sink. I LOVED Jiffy muffins; especially the apple cinnamon and blueberry, and they were so easy to make. In about 5 minutes you could have them mixed and ready for the oven.

Shopping the other day I spotted a box on the shelf, and I swear I could almost smell the sweet muffins right there in the baking aisle. That Jiffy box almost made its way into my cart…
but I’m not much of a mix girl. That said, it sure would be handy to have muffin mix ready to be whipped up on busy mornings.
Of course I made my own.

Ingredients
- 8 cups AP flour
- 2 cups sugar
- 1/4 cup baking powder
- 2 tsp salt
- 2 tsp cinnamon (optional)
Instructions
- whisk ingredients together, and store in an airtight container
Notes
to make muffins combine 2 3/4 cup muffin mix with 1 egg, 1 cup of milk, and 4 Tbsp melted butterBake @425 degrees 18 – 20 minutes
even with my now very limited pantry space, I love having muffin mix on hand. You never know when the muffin mood might hit you.
with a basic muffin mix the add ins are the fun part | here are a few ideas to get you started
1 mashed banana ( and chocolate chips of course)
1 cup of blueberries (or mixed berries)
1 cup of chocolate chips
for carrot cake muffins add 1/2 cup of finely shredded carrots and 1/4 cup raisins
mocha muffins – add 1 cup mini chocolate chip with 1 tsp espresso powder
doughnut muffins – add 1/4 tsp nutmeg and 1 tsp vanilla
apple cranberry – add 1/2 cup apples sauce and 1/2 cup dried cranberries
pumpkin – add 1/2 cup pumpkin puree and 1 tsp pumpkin pie spice (can also add 1/2 cup chocolate chips)
I could go on, and on, but I know you get the idea.
The combinations are MANY, and in less than 30 minutes you could be enjoying delicious homemade muffins.

My grandpa ALWAYS had jiffy mix! I loved the apple cinnamon one.
HA! I felt the same way growing up, we had homemade everything and of course I wanted all the packaged stuff my friends had at their houses. we appreciate it now, right? and do exactly the same thing? ?
I love the idea of a mix like this. now if there were those weird little blueberry TUBE shaped things that came in those Jiffy blueberry muffin mixes… ha!
I love Jiffy mixes too lol. I love this mix you put together, especially because it calls for melted butter, rather than adding shortening to the mix. Great job!
I’m wondering what the shelf life would be on this mixture
Double checking; is that the correct oven temperature? Seems like such a high temp for baking muffins. Most baking is done in 350 deg. oven.
Thank you
Ahahaha, I have never heard it the other way around! Our stuff was made from a box but when I tried real spaghetti sauce for the first time, I was blown away! I only thought it came from jars ?
So funny how we see things as a kid. My Dad was a chef before entering the Air Force so we always had exotic and fabulous meals. Rare that we had hotdog and other kid stuff. I sure do appreciate it now, even if I did not then. I love the idea of keeping muffin mix on hand. What a fabulous & healthy short cut. What liquid are you adding when making them?
What a great mix to have on hand! Love all of the variations!
LOVE this! Cannot wait to experiment with different types of muffins!
thanks you! happy baking
I love that you gave all the variations! I need a good muffin mix on hand-my kids love muffins!
we love them too! and there are so many fun ways to make them
It’s so funny what we long for as kids! I always wanted lunchables!
mine BEG for those ?
Isn’t it so funny how if you’re mom makes homemade food you want storebought, and vice versa? Just like all the straight haired people want curly hair and the other way around ? Everoyne needs a basic muffin mix! This is great Heather!
SO true, I would kill for some curls ?

Haha I totally feel you, my mom made everything from scratch as a kid too! As I’ve grown older, I definitely have tried harder to follow suit, especially with baked goods. Lately I’ve been using muffin mix from https://shop.kodiakcakes.com/collections/muffins because of the convenience, but I can’t wait to give this recipe a try… especially now that I know I can make the mix in bulk ? Thank you!!
