I love Sundays, but in our house they are anything but restful. Sunday is the day I spend making sure our week gets off to a smooth start. That usually means laundry, groceries and meal prep, more laundry when the kids find their dirty PE uniforms at the bottoms of their backpacks, and after quick and easy meals all week long I like to make something a bit more special for Sunday night.
I also like to make sure that breakfast and lunches are planned ahead of time so we don’t spend too much time in the morning scrambling to get out the door. I always like to have pancake and muffin mix made. Fruits and veggies get cut for lunches, and bananas sliced and put into the freezer for Stella’s smoothie bowls. I hard boil eggs for Charlie, and now I can even prep my oatmeal the night before and have it ready when we get up.
Nothing makes me happier than waking up to a hot breakfast in the morning, and knowing that it is all ready the night before makes Sunday evening that much more relaxing. We love steel cut oats, but they take a long time to cook in the morning. I’m definitely not waking up any earlier than I already do.
Overnight oats are great, but now that the weather is cooler and the mornings are darker, the kids really prefer a hot breakfast. I don’t blame them one bit. With my Hamilton Beach rice cooker I can prep the oats the night before, program the cooker for delay start and then set the cooking time. When we get up our oatmeal is hot and ready to serve.
This apple pie oatmeal is a fall favorite. It tastes like dessert for breakfast, and who doesn’t love that. I add homemade apple jam to the steel cut oats, along with cinnamon, nutmeg, and brown sugar. Apple sauce, apple butter, or diced apples would be delicious as well. Use whatever is easiest. Because the oats sit overnight, I use water in place of milk, and add some milk or cream when serving the oatmeal in the morning.

We use our rice cooker all the time. It’s got settings for white rice or quick rice when you need dinner in a hurry, which for us is Monday through Friday. The whole grain setting is great for brown rice, quinoa, farro or other grains, and the setting we use most often, hot cereal. There is even a steamer setting so your veggies and rice cook together. I have limited kitchen space, but this is one appliance I cannot live without. I use it almost as much as my slow cooker.
This apple pie oatmeal serves 4, but you could easily double the recipe to have leftovers for during the week. I keep my leftover oats in single serving Tupperware containers. When I need them I add a bit of milk and warm in the microwave or on the stove (but usually the microwave, who needs another pot to wash).
Breakfast that tastes like dessert and ready when you are is the best way I can think of get your week off to a great start.
enjoy!
