Quinoa Pudding makes the BEST comfort food for tough days
Do you ever hear about or see something, and then it is ALL you think about?
Joy the Baker made the most insane rice pudding
and it is ALL I want to eat.
Rice pudding is something you either love or hate, and I am firmly in the LOVE group. It also is probably the most perfect of comfort foods, and I could really use that today.
I had an early morning meeting at Charlie’s school today. He has been trying SO very hard, but the work is simply not easy for him. In fact, it seems almost impossible at times. It is painful for me to watch him struggle, so today’s meeting was a VERY emotional one.
In the end, we all agreed he needs extra support, and now I need to bury myself in some pudding.
Ingredients
- 2 cups of whole milk
- 1/4 cup of sugar
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1 cup of quinoa
- maple syrup for topping {optional}
Instructions
- in a medium saucepan {over medium heat} combine the milk, sugar, vanilla, cinnamon, salt, and nutmeg
- bring to a boil and stir in the quinoa
- return to a boil, and reduce the heat to low
- simmer {stirring occasionally} until the milk has been absorbed and the pudding is thick {20 – 25 minutes}
- ** it may look like it is not thickeing up, but after about 10 minutes it should start getting thicker and more pudding like
- serve warm with maple syrup
I only had brown rice in the pantry, and I was NOT waiting that long for pudding, so I decided to try quinoa.
LOVED it, and will quite possibly finish the pot for dinner.
Enjoy!
I am a rice pudding aficionado! I haven’t found a version I didn’t like yet. I think your recipe might be my breakfast tomorrow.
it is a GREAT breakfast ?
HUGS!! I’m sorry today was a rough day!
But on to more serious things (i kid), that drippy maple syrup photo is to.die.for! Makes me want to just dive right in. I’ve never thought to use quinoa for pudding, and now I must try it asap!
I may like it even better than rice now ?
This looks so warm and yummy. I’ve just started eating quinoa and am looking for new recipes.
Thanks!

we love quinoa, but this is probably the best way to eat it ?
Did you have to precook the quinoa, or was it cooked in the milk vs cooking in water (as you would in a more savory preparation)? My hubby loves rice pudding, can’t wait to try this!
the quinoa is cooked in the milk – hope you enjoy it
Does this hold over night or better to eat right away?
i think it would be just fine overnight
I love the texture of rice pudding, but I haven’t had it in forever! This sounds so yummy and it looks delish!
thanks Lindsay, I do too
Ooh, that looks like the epitome of comfort food for cold mornings. I’ve never had rice pudding or quinoa pudding, but boy does it look good. Hope today is better!
That looks like such a delicious breakfast! Perfect for a chilly fall morning ?
Happy Blogging!
Happy Valley Chow
it did the trick ?
Yum this looks delicious! I want to make this for breakfast!
it does make a great breakfast, lunch or dinner in my case:)
I think I will try switching out the milk for almond milk and see how it works as a vegan pudding.
I thought about doing that – but my almond milk was a little old. I bet it would be delicious
I was going to ask the same question. My daughter is lactose free, and I try to find new things for her.
Hi!
I just made Heather’s AMAZING recipe and wanted to share the dairy-free alternatives I used as I saw a couple of you talking about this very thing.
A friend and I were talking about some alternatives for this recipe as I was complaining because I’ve tried rice, soy, almond and coconut milk to make quinoa puddings before and the consistency is never right. So, she suggested I try coconut cream. So, I bought a can from Trader Joes and used 1& 1/2 cups of coconut cream and 1/2 cup of almond milk to make up the 2 cups of whole milk. It worked really well today and it’s very tasty. I didn’t even need to add any maple syrup because it’s sweet enough. I hope this helps any other dairy-free or vegan folks.
I love that idea – thanks so much for sharing
I love this….thanks for the non-dairy option!
any tine ? hope you enjoy it
You have solved my breakfast dilemma on this chilly morning!
glad i could help ?
I’m sorry you had a rough day at Charlie’s school. This would have brightened up my day too! It looks delicious and healthy so I’ll be pinning it. I’m hopping over from Whimsy Wednesday (my posts are linkups # 61 Orange & Chocolate Halloween Cookes and 66 Tips for Baby’s First Haircut)
thank you Carrie, comfort food always helps at least a little
oh I MUST make this! I love Quinoa! And there’s nothing wrong with needing a little extra help in school ? Kids who get help earlier bounce back sooner.
thanks for that! he’s going to need quite a bit, but I’;m sure it will all work out in the end
wow that looks great, and I love rice pudding too. Sorry you had a hard day, been there before with the kids too.
u – some days it just seems too much is happening at once
This looks delicious and so healthy. Great way to bounce back from a rough day!
Hi! This looks amazing! I’m trying to cut back on sugar and I’m wondering if I cut the sugar in half if it will make much of a difference? Thanks!
well, it definitely won’t be as sweet, but other than that it won’r make much of a difference.

This looks and sounds great. I’ve never cooked quinoa but I want to try this. I’ve heard you have to rinse the quinoa or it will be bitter. Did you rinse it or is it not actually a problem?
if I remember to I do, but I don’t usually
Do you cover the pan with a top when cooking as you do when you make simple quinoa?
Excited to try!
no, I didn’t- as I wanted to stir it often

YUM! Can this be made in a pressure cooker? Would truly be the “cherry on top” for us and no doubt many people with the popularity come back of electric pressure cookers. Can you give a how to please?
I have never tried using a pressure cooker – but would love to hear if it turned out for you

I just made it this morning. I think I failed. I used oat milk because that’s our favorite dairy replacer. Is the quinoa supposed to be almost chewy or did I not cook it long enough?
its been a ong time since I have made this, but yes, it is pretty thick,, but not quite chewy like a baked oatmeal
Do you rinse the quinoa first?
i’m pretty sure you are supposed to, but honestly i never remember that step ?
Wondering if this can be made ahead and frozen in small-size/individual portioned containers for grab and go? Any idea if it would be good after freezing and reheating in the microwave?
i have never tried to freeze, but it should work
This looks so good! What a great way to still get in a comforting breakfast food, but also some protein to start the day!
Thanks for sharing! Can I prep a few for a grab n go breakfast for the week?
i would make sue to use them within 3 days
